Mathias Bachmann: our Executive Chef

Mathias Bachmann was born in Bressanone and has close ties to his homeland of South Tyrol. Its typical flavours have been the central theme of his cuisine for many years. His passion for cooking and culinary delights was sparked by his parents.

Bachmann has been delighting guests with his sensual creations as head chef at Hotel Elephant since November 2015. He tastefully showcases the inspiring diversity of nature with humility, respect and passion. At first, he orientated himself strongly towards French haute cuisine and Mediterranean cuisine, which he learned in his various career stages. Over time, however, he increasingly found his own Alpine-Mediterranean-influenced culinary identity. Now, he skilfully combines this with techniques used in Japanese cuisine and flavours from all over the world to create unforgettable taste experiences. 

Through his cosmopolitan nature, he creates his very own style. Nevertheless, the quality of the ingredients always takes centre stage for him. These are selected according to their seasonality, freshness and possibilities of combination. Of course, the high quality also includes the constant search for outstanding partners throughout the region – from fishermen and hunters to farmers who grow produce especially for Bachmann.
